It is better to make them from wholemeal flour, but always with the addition of oat, buckwheat or flaxseed flour. This will make the dough more elastic and softer. Instead of sugar, you can use any substitute. So, let's start making pancakes from wholemeal flour for diabetics 🤗
Ingredients
- 120 g wholemeal flour
- 2 tbsp. oat flour
- 2 eggs
- 1 tbsp. olive oil
- 0.5 tsp leavening agent
- sugar substitute to taste
- salt on the tip of a knife
- 100 ml water
Instructions
- Prepare all the ingredients for making pancakes for diabetics.
- Lightly beat the eggs with salt and sugar substitute.
- Add wholemeal and oat flour, baking powder, and mix until smooth.
- Pour in the warm water and olive oil and mix well again. Cover the dough with cling film and leave it for 15 minutes.
- Stir the batter, pour a little into a preheated frying pan, spread over the entire surface and fry for 1.5-2 minutes on each side.
- You can serve pancakes for diabetics with boiled chicken or turkey, low-fat cottage cheese, stewed vegetables, spinach, fish, scrambled eggs, as well as fruit and berries.
