Looking for an easy recipe for cottage cheese pancakes? Try making these pancakes according to a recipe I inherited from my grandmother. She used to make them for breakfast ?
Ingredients
- 400 g cottage cheese
- 2 tbsp. wheat flour
- 1 egg
- 1 tbsp. sugar
- pinch salt
- sunflower oil (for frying)
- flour (for rolling the cottage cheese pancakes)
Instructions
- Prepare all the products. To make the pancakes puffy, it is better to take dry cottage cheese. If your cottage cheese is wet, squeeze it through cheesecloth. Note that 400g is the weight of already squeezed cottage cheese.

- Sift in the flour.

- Place the cottage cheese in a bowl, add the egg, salt and sugar.

- Knead the cottage cheese well and mix the mixture until homogeneous so that there are no lumps. It is better to use a fork.

- Add the sifted flour to the curd mixture.

- The cottage cheese dough does not need to be kneaded for a long time, just mix all the ingredients well until homogeneous. You may need to add a little more flour (about 1 tbsp), it depends on the moisture content of the curd and the size of the egg. But don't add too much flour to make the cottage cheese pancakes tender. To check the consistency of the dough, roll it into a ball. If the ball holds its shape well and is soft, there is enough flour.

- Roll the curd mixture into balls of the desired size (I have about 50g each).

- Roll each ball in flour.

- Shape your cottage pancakes into the desired shape, no more than 1-1.5 cm thick.

- Heat a frying pan and pour vegetable oil on it (I have 3 tbsp), wait for the oil to warm up and place the cottage cheese pancakes on the pan.

- Fry the syrniki on medium heat for 3-4 minutes on each side until golden.

- If desired, place the cottage cheese pancakes on a paper towel to drip off excess oil. With this amount of ingredients I get 10-11 pieces of tasty and airy pancakes.
