I really love cooking, especially when I find some new recipe. But there are some recipes that I consider classics and that I always come back to. One of them is a recipe for homemade courgette caviar that I inherited from my grandmother. Cooking courgette caviar according to this recipe will not take a lot of time, because you do not need to fry all the vegetables separately ???
Ingredients
- 1 kg courgettes (weight of already peeled)
- 300 g onions
- 250 g carrots
- 70 g vegetable oil
- 80 g tomato paste
- 1 tbsp. sugar
- 1 tbsp. vinegar 9%
- 1 tsp salt
- 0.5 tsp coriander
- 0.5 tsp ground black pepper
Instructions
- Prepare all the ingredients.

- Wash the courgettes and remove the skin with a vegetable peeler. It is better to take young courgettes, they are juicier. You can also use overripe ones, but in this case you need to remove the seeds. Cut the courgettes into small cubes.

- Wash and peel the carrots. Grate or chop as you like (small dice, slices).

- Peel the onion, wash and cut into small cubes.

- Fry the onion in a frying pan with sunflower oil until lightly golden.

- Add the carrots to the onions and mix well. Continue frying the vegetables until the carrots are soft. Then add the tomato paste to the vegetables, stir once again, simmer for 3-5 minutes and remove from the heat.

- Place the sliced courgettes and roasted vegetables in a saucepan or sauté pan. It is best to use a thick-bottomed saucepan. Add salt, sugar, coriander and pepper.

- Stir all the ingredients, cover the pan with a lid and place over low heat. Stir periodically, the courgettes will give a juice in which to cook the vegetables. If you are using overripe and not juicy enough courgettes, you can add a little water (50-70 ml). Stew the vegetables for about 30-40 minutes (the courgettes should become completely soft).

- Remove the pan from the heat, chop the vegetable mixture until smooth using an immersion blender. Add the vinegar and bring the caviar to a boil. If bubbles appear, remove the pan from the hob and leave to cool completely.

- You get tender, delicious courgette caviar just like in the shop. You can serve the caviar prepared according to this recipe immediately or make it for the winter.
