I don't know about you, but I just can't imagine a festive table without my favourite puffed salad Herring Under Fur Coat "Shuba". Bright, tasty, hearty - in a word, the perfect salad for winter (and not only) holidays! I'm sharing with you a classic recipe for herring with a fur coat salad with roasted vegetables ?
Ingredients
- 1 pcs salted herring (I have 570 g)
- 1 pcs beetroot
- 2 pcs carrots
- 2 pcs onions
- 3 pcs potatoes
- 250 g mayonnaise (to taste)
- 1.5 tbsp. vinegar 9%
- 3 tbsp. water
- herbs (for decoration)
- salt, black pepper (to taste)
Instructions
- Prepare all the products.

- Preheat the oven at 180-190 degrees. Wash the potatoes, beetroot and carrots, dry and wrap each vegetable in foil.

- Place the vegetables on a baking tray. Bake until cooked through (I baked the potatoes for 50 minutes, the carrots for 1 hour, and the beetroot for 1.5 hours). Then allow the vegetables to cool completely in the foil. You can prepare the vegetables in advance, for example, in the evening, and the next day already making the salad.

- Peel and wash the onion.

- Cut the onion into half rings. Add salt, black pepper, vinegar and water. Stir and let the onions marinate for 15-20 minutes. Then drain the liquid.

- Peel the herring, remove the bones and skin.

- Cut the herring into small cubes.

- Remove the vegetables from the foil.

- Peel off the skin.

- Grate the potatoes into a coarse grater.

- Also grate the carrots.

- And beetroot.

- Now you can start assembling the "Shuba" in layers in order ? Layer 1 - lay out the potatoes, smooth and tamp (you can put a little mayonnaise).

- Layer 2 - lay out the herring.

- Layer 3 - onions

- Layer 4 - lay out the carrots, flatten.

- Spread with mayonnaise.

- Layer 5 - lay out the beetroot, smooth out.

- Brush the top well with mayonnaise. Note: adjust the amount of mayonnaise to your taste. You can smear mayonnaise on each layer of "Herring under a fur coat", but I prefer to use mayonnaise only for smearing the layers with carrots (Step 17) and beetroot (Step 19).

- Allow the "Shuba" to soak well (overnight is best).

- Decorate the salad to your taste. I used green onions and pomegranate grains ?
