Today I have a very special recipe for you - Honey Cake Medovik with custard and chocolate glaze! ???This delicate and fragrant dessert will become the main decoration of your festive table and will win the hearts of all guests ? Cook it according to my recipe and enjoy every piece of this magnificent cake! ?
Ingredients
For dough:
- 2 small eggs
- 0.5 cups sugar (100 g)
- 1.5 tbsp. honey
- 30 g butter
- 1 tbsp. vodka
- 1 tsp baking soda
- 2 cups wheat flour (280-300 g)
- pinch salt
For custard:
- 0.5 litres milk
- 2 eggs
- 200 g sugar
- 50 g butter
- 50 g wheat flour
For the glaze:
- 3 tbsp. sugar
- 3 tsp cocoa
- 3 tbsp. milk
- 50 g butter
Instructions
- Start by preparing the shortcakes for the Honey Cake Medovik. Prepare all the products for the dough.

- In a heatproof or metal container, beat the eggs, add the sugar, butter, honey, vodka and baking soda.

- Mix it all well with a whisk.

- And put it on a steam bath for 10-15 minutes. The mass should increase in two or three times.

- Remove the container from the steam bath, add the sifted wheat flour gradually, in several stages.

- Stir the dough thoroughly. First with a whisk, and then, as the dough becomes thick, use a silicone spatula or wooden spoon. The dough will be very soft and sticky. This is the way it should be.

- Transfer the dough into a food foil and send it to the fridge for 2-3 hours.

- Divide the dough into pieces. Roll each piece into a ball.

- Place one piece of dough on parchment and sprinkle with flour.

- Roll out the dough into a layer as thin as possible.

- Using a punch or plate, cut out a circle of the desired diameter (I have a 20cm diameter).Roll the scraps of dough into a ball to make additional cakes.

- Bake the shortcake in an oven preheated to 200 degrees Celsius for about 3-4 minutes until golden.Make and bake the rest of the cakes in the same way.

- I got 8 shortcakes + 1 small shortcake for sprinkles. If you will cut the cakes of a different diameter, accordingly, the number of cakes will be different.

- Prepare the custard for Medovik Honey Cake. Prepare all the ingredients.

- Pour the milk into a saucepan and put it on the fire, let it warm up. You need the milk to get hot.

- In a container, mix the eggs, salt, sugar and flour.

- Mix everything thoroughly until smooth.

- Pour a thin stream of hot milk (about half) into the egg mixture, stirring continuously with a whisk.

- Pour this mixture into the remaining milk in the pan, also stirring continuously with a whisk.Put the saucepan on a low heat and boil the cream until thick. Stir the cream constantly with a whisk, you need to make it boil. As soon as bubbles appear, boil for another 10-20 seconds and remove from the heat. The mixture should be smooth and silky.

- Add the butter to the cream and mix well.

- Pour the cooked custard for the Medovik Honey Cake into another bowl. Cover with food foil to prevent the custard from getting stale. Place in the cold to cool.

- Now you need to prepare the chocolate glaze for your Honey Cake Medovik. Prepare all the products.

- In a small saucepan or thick-bottomed saucepan, mix together the cocoa, sugar and milk.

- Stir well to make it homogeneous, then place the pan on a low heat, stirring constantly to prevent the glaze from sticking. Bring the glaze to the boil for 2 minutes and remove from the heat.

- Add the butter and mix well.

- Pour the glaze into another container to cool down faster.

- Prepare the crumble for the cake.

- Crumble a small piece of the shortcake in a blender. If you wish, you can add biscuits as I did to make more crumble.

- When the crumble is ready, you can start assembling the Honey Cake Medovik with custard. Place the crust on the dish.

- Spread it with the custard.

- Grease all the other cakes and sides of the cake in the same way, except the top layer.

- Brush the top and sides of the Honey Cake Medovik with chocolate glaze and sprinkle the sides of the cake with sprinkles. Then send the cake to the fridge for 5-6 hours to soak (or better overnight).
