Lazy dumplings with potatoes and mushrooms (lazy vareniki)

Lazy potato and mushroom dumplings - a fairly simple and quick to prepare dish, while very tasty and hearty. The beauty of the recipe, which I will share with you, is that the mushrooms here are suitable for any - fresh, frozen and even pickled. I cooked with fresh mushrooms, it turned out very tasty!

Ingredients
  

  • 500 g potatoes (it is desirable to take a well-digestible type of potatoes)
  • 150 g mushrooms
  • 1 pcs onion
  • 150 g wheat flour
  • 4 tbsp. vegetable oil
  • herbs (for decoration)
  • salt, pepper (to taste)

Instructions
 

  • Prepare all the products.

  • Wash, peel and dice the potatoes. Place them in a pot, pour water over them and boil them until tender (~20 minutes on medium heat, after the water boils).

  • While the potatoes are boiling, make the roast for the lazy dumplings. Chop the mushrooms and onions. Heat a frying pan and add vegetable oil (2 tbsp).

  • Brown first the onion and then the mushrooms. Stir-fry until cooked through. Season with salt and pepper to taste.

  • Drain the potatoes and mash them. Season with salt and add 2 tbsp vegetable oil. Mix well so that the mash is homogeneous, without lumps. Sift the flour well (fine sieve).

  • Gradually pour the flour into the mashed potatoes. Knead the dough for the lazy dumplings until it is soft and elastic without sticking to your hands.

  • Divide the dough into several pieces and roll them out into "sausages". Cut small pieces of dough and flatten them slightly.

  • Take a large saucepan (3 litres or more), pour in the water and bring it to the boil. Add the salt. Keep the heat on high and leave it that way. Dip the lazy dumplings into the water and stir gently so they don't stick together.
  • Wait until the lazy dumplings float to the surface. Then transfer them to the pan with the mushrooms using a skimmer. Fry your dish over a medium heat for 3 minutes, stirring gently.
