Meatless borscht soup with beans is a great option for those who are fasting, adhering to a diet or do not eat meat. In our family, borscht without meat is also prepared as a "balm" for the stomach after the winter holidays ? After all, it is very light, but at the same time nutritious and delicious!
Ingredients
- 300 g tinned beans (if you want to cook lean borscht with ordinary dry beans, then pre-soak them, and then boil them until ready)
- 5 pcs potatoes
- 1 pcs onion
- 1 pcs carrots
- 1 pcs beetroot
- 0,25 portions cabbage
- 1 pcs tomato (large)
- 2 litres water (I used 2 litres of water per 2.5 litre pot because we like thick borscht. If you like more liquid borscht, take a larger pot and, accordingly, add more water)
- 1 tbsp. tomato paste
- 5 tbsp. vegetable oil
- 1 pcs laurel leaf
- 2 cloves garlic
- salt (to taste)
- herbs (to taste)
Instructions
- Prepare all the products.

- Peel the potatoes, onions, beetroot, carrots and garlic and rinse under water. Drain the liquid from the tinned beans.

- Cut the potatoes into small pieces.

- Slice the cabbage into thin strips. My cabbage is mature, so I will cook it together with the potatoes. If you have a young cabbage, then add it to the borscht at the last stage - when the potatoes are boiled and the roast is ready.

- Pour cold water into a saucepan, add chopped potatoes and cabbage. Bring to the boil, then turn down the heat to medium and simmer for 15-20 minutes.

- While the potatoes and cabbage are simmering, make the stir-fry. Grate the beetroot and carrot into a coarse grater. Cut the tomato and onion into small cubes (you can remove the skin from the tomato in advance, if you wish). Heat the sunflower oil in a frying pan and fry the vegetables for 5-10 minutes, stirring.

- Add the tomato paste to the frying pan, mix well and keep on the hob for another 3 minutes. Tomato paste can be replaced with ketchup or tomatoes in their own juice, if necessary.

- When the potatoes and cabbage are almost ready, add the pot roast to the pan and increase the heat.

- Once the borscht is boiling, add the beans to the pot. Salt to taste. Reduce the heat to medium and simmer the borscht for another 5 minutes.

- Add bay leaf, finely chopped herbs and garlic (chop finely or press through a press - at your discretion). Mix everything together. Keep the borscht on the hob for another 5 minutes, then cover with a lid, turn off the heat and let the borscht infuse for a while.
