Delicious mushroom hodgepodge: step-by-step recipe

Do you want to cook a delicious and flavourful mushroom soup? I share with you a recipe for a classic mushroom hodgepodge. I used fresh mushrooms for cooking. If you want to add wild mushrooms, it will be even tastier! I also note that this recipe is a light, lean / vegan version. To make a more hearty soup, cook it with meat broth.

Ingredients
  

  • 300 g mushrooms (I got fresh mushrooms)
  • 1 pcs onion (purple or ordinary, it makes no difference)
  • 6 pcs potatoes
  • 2 litres water
  • 200 g seedless olive
  • 2 pcs pickled cucumber
  • 4 tbsp. vegetable oil
  • 1.5 tbsp. tomato paste
  • 1 pcs laurel leaf
  • 1 pinch salt
  • black pepper (to taste)

Instructions
 

  • Prepare the products.

  • Clean and wash the onions and mushrooms. Slice the pickles and also slice the onion and mushrooms.

  • Heat a frying pan, add vegetable oil and fry the onions for a few minutes on medium heat.

  • Add the sliced mushrooms to the onions. Fry for a couple of minutes, stirring.

  • Add the sliced pickles and tomato paste and stir. Cover the pan with a lid and fry for a further 5 minutes, stirring. Keep the heat to a minimum.

  • Put a pan of water on the fire (or meat stock if you're making a heartier version of the mushroom hodgepodge). While the mushrooms are frying, peel, rinse and cut the potatoes (cubes, pieces - as you like). Add them to the boiling water / broth.

  • Next to the potatoes, add the fried mushrooms to the pot and cook for 20 minutes (from the boiling point).

  • Drain the liquid from the tinned olives. Add them to the hodgepodge of mushrooms. Add the bay leaf and salt and black pepper the soup. Cook for another 5 minutes. Then remove the pan from the heat and let the mushroom hodgepodge infuse for half an hour.

  • Delicious and flavourful hodge podge soup is ready! Decorate it with lemon slices and fresh herbs. If desired, you can add sour cream or mayonnaise.
