I share with you the recipe for the most favourite and delicious dessert in our family - Napoleon cake. I can not say that this cake is prepared simply and quickly, but the result will certainly be worth your efforts. The cake turns out very tender, well soaked and insanely delicious!
Ingredients
For dough:
- 200 g butter or margarine
- 1 pcs egg
- 125 ml water
- 420 g wheat flour
- 1 tsp vinegar
- pinch salt
For custard:
- 500 ml milk
- 200 g sugar
- 2 pcs eggs
- 40 g wheat flour
- 50 g butter
- pinch salt
- pinch vanillin
Instructions
- Prepare all the products for the dough.

- Beat the egg in a container, add salt, vinegar, cold water (cool the water in the fridge beforehand).

- Mix well and send to the fridge.

- In a separate bowl, sift the flour.

- Put the previously frozen butter (or margarine) in the flour and roll it well in it.

- Grate the frozen butter on a coarse grater, dipping a piece of butter into the flour every now and then.

- Mix the grated butter and flour well to make a crumbly mixture (mix quickly so that the butter doesn't melt).

- Make a small hole in the centre of the dough.

- Pour in the egg mixture prepared in steps 2-3.

- Quickly knead the dough. Note that the dough for Napoleon cake should not be kneaded for a long time. As soon as the dough has been kneaded into a single lump, it's ready!

- Wrap the dough in cling film or a bag and put it in the fridge for a couple of hours. The dough should cool down.

- Divide the cooling dough into pieces (I divided it into 6 pieces).

- Place one piece of dough on parchment, sprinkle a little flour on it. Send the remaining pieces of dough to the fridge.

- Roll out the dough into a layer.

- Using a plate (I have a 23cm plate), cut out a circle. Do not remove the trimmings, bake them together with the pastry. Prick the pastry with a fork. Note: steps 15 and 16 apply to the remaining pieces of dough.

- Bake the shortcakes for Napoleon in an oven preheated to 200-220 degrees until cooked through, until golden. I baked the shortcakes for about 8 minutes, but you can use your oven. My scraps cooked faster than the shortcakes, I took them out a couple of minutes earlier.

- I ended up with 6 cakes.

- And the trimmings for sprinkling on the cake.

- Prepare all the ingredients for the custard.

- Pour the milk into a saucepan and heat it up (it's best to use a thick-bottomed saucepan to prevent the custard from sticking).

- In a separate bowl, beat the eggs, add the salt, sugar, vanillin and flour.

- Mix well until smooth with a whisk.

- Pour about half of the warm milk into the egg mixture.

- Mix well with a whisk.

- Pour this resulting egg mixture into the rest of the milk in the pan, while stirring well.

- Put the pan on a low-medium heat and cook the cream, stirring continuously with a whisk, until thickened. Remove the pan from the heat as soon as bubbles appear on the surface and the cream is slightly glossy and smooth.

- Add the butter.

- Mix well.

- Pour the finished custard into a separate container.

- Cover the custard with food foil. Make sure that the food foil touches the custard completely (!). This is so that no crust forms on the cream. Cool the cream for Napoleon. You can put it out in the cold to cool down faster.

- You can start assembling the cake. Put a little cream in the centre of the dish and spread it out (so that the crusts don't "ride" on the plate).

- Place the shortcake in the centre.

- Spread the cream over it.

- Repeat steps 31-32 for all the shortcakes. Brush the top and sides of the Napoleon cake with custard.

- Chop the trimmings into crumbs using any method you prefer.

- Sprinkle the crumbs over the top and sides of the Napoleon cake. Allow it to proof for at least 6 hours, or better still, send it to the fridge overnight.

- Tender, moderately sweet and insanely delicious Napoleon cake is ready! Cut it into portioned pieces and serve ?
