Delicious pancakes: recipe with eggs, milk and flour

Ingredients
  

  • 2 pcs large eggs (С0)
  • 60 g sugar
  • 30 g butter
  • 260 g milk
  • 240 g wheat flour
  • 2 tsp leavening agent (10 g)
  • 1 pinch salt
  • 1 pinch vanillin

Instructions
 

  • Prepare all the products. Please note, the products must be at room temperature (milk and butter can be taken from the fridge as they will need to be heated).

  • Be sure to sift the flour.

  • Heat the milk until it is warm.

  • Melt the butter in the microwave.

  • In a bowl, beat the eggs, add the salt and sugar.

  • Beat the mixture with a mixer to make it puffy and light.

  • Add a pinch of vanilla, warm milk and melted butter to the egg mixture.

  • Mix on the slow speed of the mixer.

  • Add half the flour and baking powder.

  • Mix the dough with the mixer on slow speed (or with a whisk). Add the rest of the flour, mix again. Then stir the dough with a silicone spatula to make sure all the flour is incorporated and there are no lumps. Do not stir the batter for long, as soon as you see that the flour is evenly incorporated, the batter is ready. The batter for pancakes is not thick, a little less fluid than for classic pancakes. If the batter is thick, then add a little warm milk, as everyone's flour is different. Conversely, if the dough is runny, add a little more flour.

  • Heat up the frying pan. Drop the batter by tablespoonfuls into a pancake shape. Fry the pancakes on low to medium heat in a dry pan for about 1-2 minutes on each side. If you are unsure of your pan, grease it with a thin layer of sunflower oil once before frying the pancakes.

  • When you see bubbles on the surface of the batter, it means you can flip the pancake. The finished side of the pancake should be golden in colour.

  • On the other side, fry the pancake until cooked through, about 1-2 minutes. Once the pancake is browned, then it's done! Note: since everyone's fire, pans, and pancake sizes are different, pancake frying times may vary.
