Sardine salad “Mimosa” is a real feast for taste buds! Juicy sardine is perfectly combined with tender egg and baked vegetables. Such a salad can be prepared for any occasion, be ready to receive compliments ?
Ingredients
- 5 eggs
- 1 can of sardines in oil (240 g)
- 3 pcs potatoes (medium size)
- 1 carrots (medium size)
- 1 onion
- 30 g frozen butter
- 1 tbsp. vinegar 9%
- 2 tbsp. cold water
- salt, black pepper to taste
- mayonnaise to taste
- herbs for decoration
Instructions
- Prepare all the products.

- Pour cold water into a saucepan, add salt and put the eggs in. Put on the heat. Cook after boiling for 8 minutes.

- Allow the cooked eggs to cool completely.

- Rinse the potatoes and carrots, wrap in foil and send to the oven (180-200 degrees) to bake until cooked. I baked the potatoes for 45 minutes and the carrots for 1 hour. But you are orientated on your oven.

- When the vegetables are ready, let them cool completely and then remove them from the foil.

- Peel the baked potatoes and carrots.

- Peel and wash the onion and chop it as finely as possible. Add salt, pepper, vinegar and water. Stir and leave the onions to marinate for 15-20 minutes.

- Then drain the onions in a sieve to drain off all the liquid.

- In a separate bowl, mash the sardines together with the oil.

- Coarsely grate the carrots and potatoes.

- Peel the eggs and separate the whites from the yolks.

- Grate the whites into a coarse grater.

- Grate the yolks on a fine grater.

- Everything is ready, now you can start assembling the Mimosa salad with sardine in layers. I did it in a sliding round mould, but you can use a suitable salad bowl, glass mould or other.Adjust the amount of mayonnaise to your taste. I would also like to point out that when assembling the salad, you can salt the vegetables and eggs a bit if you wish.So, let's begin ?1 layer of Mimosa salad with sardine - potatoes, smeared with mayonnaise on top.

- 2 layer - sardine.

- 3 layer - pickled onions and frozen butter grated on a coarse grater (on top of onions).

- Brush the third layer with mayonnaise.

- Layer 4 - carrots. Brush this layer with mayonnaise too.

- Layer 5 - egg whites and mayonnaise.

- Layer 6 - egg yolks.The last layer does not need mayonnaise. Cover the salad with cling film and send it to the fridge for a couple of hours. Mimosa salad with sardine can also be left to soak overnight.

- Before serving, decorate the Mimosa salad with fresh herbs. Bon appetit!
