I am sharing with you a recipe for classic stewed cabbage, which I inherited from my grandmother. No matter how many times I tried this dish in guests or in establishments, my grandmother's version of cooking remains for me the most delicious and successful!
Ingredients
- 1.2 kg cabbage winter variety (if you have winter cabbage, stewing will take 35-40 minutes, if the cabbage is young, 15 minutes will be enough)
- 450 g onions
- 350 g carrots
- 3 tbsp. vegetable oil
- 3 tbsp. tomato paste
- 1.5 tbsp. sugar
- 1 tbsp. salt
- herbs for decoration (optional)
- black pepper (optional)
Instructions
- Prepare all the products.

- Shred the cabbage, grate the carrots, cut the onion in half rings.

- Heat sunflower oil in a pot, frying pan or sauté pan (I have a small saucepan). Fry the onion over medium heat until half cooked (~3 minutes).

- Add the carrots to the onions and fry for another 3 minutes.

- Add half of the chopped cabbage and mix with the onions and carrots. Fry over medium heat for 3 minutes, stirring. The cabbage should become softer.

- Add the remaining half of the cabbage, salt and mix well. Cover the pan with a lid and simmer for 10 minutes on a low heat. If the cabbage is not juicy (as in my case, it didn't want to juice), add 100-150 ml of water during stewing.

- In the centre of the pan, gently pull the cabbage apart and put the tomato paste. Fry it for 1 minute and then mix it with the cabbage.

- Add the sugar and stir.

- Continue to fry the cabbage on a low heat for about 5-7 more minutes, until it is fully cooked (you will tell by the softness and flavour of the stewed cabbage).

- Delicious cabbage stew (kapuska) is ready! Before serving, sprinkle it with black pepper and garnish with fresh dill.
