Sweet, tender, familiar to us since childhood Ukrainian Honey Cake is a great treat for both a festive table and a cosy home tea party. A nice bonus - the preparation uses completely simple and affordable products. I'm sharing our family recipe with you ?
Ingredients
- 1 pcs egg
- 100 g sugar
- 1 tbsp. honey
- 1 tsp baking soda
- 50 g butter or margarine
- 300 g wheat flour
- 500 g sour cream 20% fat content
- 50 g icing sugar
- 0.5 tsp lemon juice
- 100 g walnuts (roasted and peeled)
- pinch salt
- pinch vanillin
Instructions
- Prepare all the products for baking the cakes.

- Prepare all the products for the sour cream.

- First prepare the batter. In a saucepan, pour a small amount of water. Put the pan on the fire, let the water boil.

- In a glass (heatproof) or metal container, pour in the sugar, honey and butter.

- When the water boils in the pot, turn the heat down to low and place the container with the contents on the pot so that the water in the pot does not touch the container, i.e. put it on a steam bath.

- Melt the mixture on the steam bath until smooth (you can stir with a whisk in the process).

- In a separate container, add the egg, salt and vanillin.

- Whisk until smooth.

- In a separate bowl, sift the flour.

- When the mixture has melted in the steam bath, remove the container from the heat and add the egg beaten in Step 8 + baking soda.

- Mix well.

- Return the batter to the steam bath again.

- Stir the dough with a whisk until the mass increases 2-3 times. It will take approximately 7-10 minutes. Then remove the pan from the heat and the container from the steam bath.

- Pour in the flour in small portions.

- Knead a soft, smooth, elastic, homogeneous dough. It should not stick to your hands (I used 280g of flour).

- Preheat the oven to 200 degrees centigrade. For convenience, I divided the dough into roughly equal portions.

- Place a piece of dough on the parchment, sprinkle it with flour.

- Roll out the shortcake (as thin as possible).

- Using a plate, cut out a circle (I have a 19cm plate).

- This is how the future shortcake will turn out. Roll the scraps into a ball to make a small cake for sprinkling.

- Send the dough to the preheated oven for 3-5 minutes. When the pastry is browned, it's ready.

- With this amount of dough I got 7 cakes + 1 small piece for sprinkling on the cake. All the cakes are 19 cm in diameter. You can bake cakes of any size and shape.

- Cool the cakes. You can also bake the cakes in advance (put them in a bag).
- Prepare the sour cream for the Medovik Honey Cake. Put sour cream in a container (sour cream should be from the fridge) and add sifted icing sugar.

- Start beating the cream with a mixer at minimum speed (~2 minutes), and then gradually switch to high speed and beat until the mixture becomes lumpy and leaves whisk marks. Add the lemon juice and vanilla.

- Beat the cream with the mixer for about another minute.

- Sour cream for Honey Cake Medovik is ready!

- Start assembling the cake. Spread a little cream on the centre of the dish (so that the crust doesn't ride on the plate).

- Place the first cake.

- Spread the cream over it.

- Cream the rest of the cakes and the sides of the cake in the same way.

- There's not much left to do - decorate the honey cake. Prepare the remaining shortcake and roasted walnuts.

- In the bowl of a blender, chop the shortcake into pieces and add the nuts.

- Grind into fine crumbs.

- Sprinkle the crumbs over the top and sides of the cake.

- Let the cake soak in a cool place for at least 5-6 hours, or preferably overnight.
