If you had to choose a king among salads, it would definitely be "Olivier". Delicious, hearty, festive - a favourite of almost every Ukrainian family! I share with you the classic recipe for this salad, with sausage and pickles.
Ingredients
- 5 pcs potatoes
- 2 pcs carrots
- 5 pcs eggs
- 400 g boiled sausage
- 5 pcs pickles
- 1 pcs onion
- 200 g tinned green peas
- 220 g mayonnaise
- salt, black pepper, lemon juice (to taste)
Instructions
- Prepare all the products.

- Wash the potatoes and carrots well, put them in a saucepan, pour cold water over them. Put on the fire and cook after boiling for 20-25 minutes until tender (I cooked potatoes for 20 minutes, carrots for 25 minutes).

- Send the eggs to the saucepan. Fill with cold water and add salt so the eggs will peel well later. Cook after boiling for 8 minutes.

- Cut the onion into small cubes.

- Season with salt, black pepper and a splash of lemon juice.

- Stir and let the onions marinate.

- Cool the potatoes and carrots.

- Peel the vegetables from their skins.

- Cut into roughly equal-sized cubes.

- Allow the eggs to cool well.

- Peel them.

- Dice the eggs.

- Peel the sausage from the foil. Dice the sausage.

- Remove the tails from the pickles.

- Cut into small cubes.

- In a large bowl, combine all the chopped food, add the peas and onion (if there is liquid in the peas, drain it).

- Mix the salad well.

- Add mayonnaise.

- Mix everything thoroughly.

- Olivier potato salad is ready! Serve it with fresh herbs and peas.
